Chili-Lime Chicken Burrito Bowls
Ingredients: Chicken (duh), 3 cups White Rice, Black Beans, Corn, Diced Red Pepper, Pico de Gallo, Cilantro, and Guacamole. For extra flavor and texture, I also added Roasted Sweet Potato (tossed with Tajin, trust me).
3 cups of rice should equal 6 cups after cooking. Using 1 cup as a base per bowl, layer in other ingredients as you see fit.
Chicken Marinade:
1/2 red onion, coarsely chopped
2 cloves garlic
1 chipotle chile in adobo, plus 2 tbsp. sauce
3 tbsp. vegetable oil
Juice of 1 lime
1 tsp. dried oregano
1/2 tsp. ground cumin
1/2 tsp. cayenne pepper (optional)
Kosher salt
Freshly ground black pepper
1 lb. boneless, skinless chicken breasts
In a food processor, blend onion, garlic, chile, adobo sauce, oil, lime juice, oregano, cayenne, and cumin until smooth; season with salt and pepper. Place whole chicken breasts in a resealable plastic bag, and let it marinate for 3 hours, overnight, or 3 days if you're slacking like I was.
Omitting cheese, sour cream, sauce, etc, would equate to a "healthier" dish; there's a ton of flavor from the chicken as is, but you do you.
